Its durable heavy duty 20 gauge stainless steel exterior will stand up to years of heavy use! The two door design with controls for each cabinet means you can use two different temperatures, while the universal rack design accommodates standard full size food pans or full size sheet pans.
Other holding cabinets use fans to circulate warm air throughout the cavity, creating a drying effect. Some may even use steam to compensate for this air movement, but that can rob your foods of flavor!
The Halo Heat System utilizes unique, electric thermal cable that's wrapped around three sides of the cabinet, providing a gentle, radiant heat source for your food. That results in no cold or hot spots, or air movement to dry out your food! As a result, the Halo Heat system preserves food quality longer, resulting in less waste!
An additional benefit of the Halo Heat system is that the holding cabinet radiates less ambient heat, and uses less energy than comparably sized holding cabinets.
The Alto-Shaam 1200-UP mobile dual compartment holding cabinet has a temperature range of 60 to 200 degrees Fahrenheit with a digital display on each compartment to ensure that your food stays at the right temperature. Each compartment also has a 22 gauge stainless steel door that has a handle impregnated with antimicrobial additives for increased food safety!
A set 5" heavy duty casters (2 with brakes), provides easy mobility. Each compartment is equipped with two sets of chrome plated universal side rails and four sets of pan slides to accommodate standard full size pans. The pan supports are adjustable in 16 positions, spaced on 1 3/4" centers. This cabinet requires a 120V electrical connection.
